We celebrate our first 100 years with the publication of the monograph Mario and the noble coast of mold written by Jacopo Fontaneto and Claudio Salsa for CentoArchi Edizioni.
The aim was to tell a story that unfolds through human and historical events and that tells the background and the development of a cheese that is in itself fantastic and fascinating. The story of Mario Costa, therefore, is intertwined with that of a city, its city: Novara.
Jacopo Fontaneto is a journalist and gastronomic critic. Expert in the history of cooking, he is the director of reviews and culinary festivals in Italy. He collaborates with national periodicals in the agri-food sector and is the author for the L’Espresso Restaurants Guide of Italy. Claudio Salsa has trained as an expert in agricultural techniques and the application of the community agricultural policy and has collaborated in the realization of important international cooperation projects, aimed at promoting the development of rice growing in the countries of sub-Saharan Africa.
