Truffle Blue Cheese by Costa


This time Costa wanted to combine the well-known sweet Gorgonzola DOP with one of the excellences of the Italian territory, the truffle. As usual, the pursuit of excellence starts with the scrupulous selection of raw materials and in this case too Costa has selected a leading supplier to use in the processing of black summer truffle flakes. The desire to convey the character of the new ingredient has led us to use it directly in the milk processing stages; more precisely in the shaping of the curd, made by hand by our expert workers, during which the truffle flakes are distributed between one layer and another. This allows the ingredient, during the months of maturation, to transfer its character in a delicate but persistent way and giving the finished product an extremely balanced taste.
Costa's goal is in fact to maintain the distinctive characteristics of the marbling of Gorgonzola, to which to add delicate notes of truffle, without the latter taking over the flavor.
The result is a characteristic but not too aggressive cheese, which lends itself to infinite uses both as it is and in the culinary field with lively combinations on meats and first courses.
A new bet of taste that we are sure will be appreciated by the most refined palates and that we hope will soon become the protagonist on the Italians tables.
