“Dolcificato Costa”: it’s a sweet Gorgonzola dop, a raw-paste blue cheese produced with whole pasteurized cow’s milk. paste compact and creamy, white straw-coloured, mottled with veins made of mould. rough rind, grey reddish in colour but not edible. Flavour particular and distinctive, lightly spicy.
