“Dolcificato Costa Gran Riserva”: it’s a sweet Gorgonzola dop, strictly selected. Raw-pasta blue cheese produced with whole pasteurized cow’s milk. Paste compact and creamy, white straw-coloured, mottled with veins made of mould. Rough rind, grey reddish in colour but not edible. Flavour intense, slightly spicy and distinctive due to extended and selected aging.
